What Happens Inside Your Dough During an Autolyse?

Sometimes the simplest steps in sourdough baking can make a noticeable difference in how your dough feels and behaves.

An autolyse is a resting period that happens after flour and water are mixed together and before the dough is fully developed.

During this time, you aren't kneading, stretching, or shaping the dough.

But that doesn't mean nothing is happening.

While the dough rests, flour continues absorbing water, gluten-forming proteins begin organizing into a network, and naturally occurring enzymes begin working on the starches and proteins in the flour.

The dough you mixed at the beginning of the autolyse can feel very different 30 or 60 minutes later.

Understanding what happens during this resting period can help you decide whether an autolyse is useful for your sourdough recipe—and how long you should let your dough rest.

What Is an Autolyse?

A traditional autolyse is simply flour and water mixed together and allowed to rest before adding the sourdough starter and salt.

The technique was developed by French baker and researcher Raymond Calvel as a way to improve dough development while reducing the amount of mechanical mixing required.

During the resting period, the flour absorbs water and begins developing structure naturally.

Some modern sourdough recipes use the word autolyse for a rest that includes the sourdough starter. Technically, this is different from a traditional autolyse because fermentation begins once the starter is added.

Both methods can be useful, but understanding the difference helps you better control your dough.

0 Minutes: Hydration Begins

Immediately after flour and water are mixed, the dough may look rough, shaggy, and uneven.

You may still see small pockets of dry flour.

At this stage, water is beginning to move into the flour particles.

The proteins responsible for forming gluten—primarily glutenin and gliadin—are beginning to hydrate.

But the dough hasn't had enough time to develop much structure.

If you try stretching the dough immediately, it may tear easily and feel stiff or uneven.

This is completely normal.

The flour simply needs more time to absorb the water.

15 Minutes: The Flour Is Waking Up

After approximately 15 minutes, the dough often begins to feel different.

Water continues moving deeper into the flour particles.

Dry areas become hydrated, and the dough begins to feel smoother with very little effort from the baker.

If you compare freshly mixed dough with dough that has rested for 15 minutes, you'll often notice that the rested dough is easier to handle.

This is one of the reasons rest periods can be so helpful in sourdough baking.

Sometimes the dough doesn't need more kneading.

It simply needs more time.

30 Minutes: Gluten Development Begins to Become Noticeable

After approximately 30 minutes, the gluten-forming proteins have had more time to hydrate and interact.

A gluten network begins developing naturally.

The dough may become:

  • Smoother
  • More elastic
  • Easier to stretch
  • Less likely to tear
  • Easier to handle during stretch and folds

This doesn't mean the dough has completed gluten development.

Stretch and folds, coil folds, kneading, and fermentation can continue strengthening the dough later.

But an autolyse can give the dough a helpful head start.

60 Minutes: Extensibility Improves

After approximately one hour, many doughs become noticeably more extensible.

Extensibility describes the dough's ability to stretch without tearing.

The dough may relax and stretch farther with less resistance.

This can be especially helpful when working with higher-hydration doughs or strong bread flours.

Naturally occurring enzymes are also active during the autolyse.

Amylase enzymes begin breaking some of the flour's starches into simpler sugars.

Those sugars can later provide food for the microorganisms in your sourdough starter during fermentation.

Protease enzymes begin acting on proteins in the dough, which can contribute to increased extensibility.

This enzymatic activity is one reason longer isn't always better.

What Happens During a Very Long Autolyse?

If 30 minutes is helpful, wouldn't two hours—or even longer—be better?

Not necessarily.

Enzymes continue working for as long as conditions allow.

Depending on the flour, dough temperature, hydration, and length of the autolyse, the dough may eventually become excessively extensible.

You may notice that the dough:

  • Feels unusually loose
  • Becomes sticky
  • Spreads easily
  • Has difficulty holding tension
  • Tears despite feeling very extensible
  • Becomes more difficult to strengthen during folds

Whole-grain flours can behave differently from refined bread flour because the bran and germ affect hydration, gluten development, and enzymatic activity.

Warmer dough temperatures can also increase enzymatic activity.

The goal isn't to autolyse for as long as possible.

The goal is to give your flour enough time to hydrate and begin developing structure without weakening the dough.

What Are the Benefits of an Autolyse?

An autolyse can provide several advantages when making sourdough bread.

Better Flour Hydration

Giving flour time to absorb water can create a more evenly hydrated dough.

This can be especially useful when working with whole-grain flour or higher-hydration recipes.

Easier Dough Handling

The dough may become smoother and easier to stretch before you begin completing stretch and folds or other strengthening techniques.

Improved Extensibility

Properly autolysed dough can stretch farther without tearing.

This can make shaping and handling easier later in the bread-making process.

Less Mixing or Kneading

Because some dough development happens during the resting period, less mechanical mixing may be necessary.

Potentially Better Dough Structure

When used appropriately, an autolyse can help create dough that is both extensible enough to expand and strong enough to hold fermentation gases.

How Long Should You Autolyse Sourdough?

There isn't one perfect autolyse time for every recipe.

For many home sourdough bakers, 15–30 minutes is an excellent starting point.

This gives the flour time to hydrate without unnecessarily complicating the baking process.

A 30–60 minute autolyse can be helpful when working with strong bread flour or higher-hydration doughs.

Longer autolyse periods can work for certain recipes and flours, but they should be used intentionally.

Pay attention to your flour, dough temperature, hydration level, and how the dough feels.

Should Whole Wheat Dough Be Autolysed Longer?

Whole-grain flour absorbs more water than refined white flour, so additional hydration time can sometimes be beneficial.

However, whole-grain flour also contains the bran and germ, which affect gluten development and enzymatic activity.

The sharp edges of bran particles can interfere with the gluten network, and whole-grain flour may have greater enzymatic activity than refined flour.

For this reason, longer isn't automatically better.

Start with approximately 30–60 minutes and observe how your dough responds.

Do You Add Sourdough Starter During the Autolyse?

In a traditional autolyse, no.

Only flour and water are combined.

The sourdough starter and salt are added after the resting period.

However, many home bakers mix the starter into the flour and water before allowing the dough to rest.

This is sometimes called a fermentolyse.

Because the starter is present, fermentation begins during the resting period.

A fermentolyse can be convenient and works well for many sourdough recipes.

The important thing is understanding that fermentation time has already started.

Why Isn't Salt Added During a Traditional Autolyse?

Salt strengthens and tightens the gluten network and slows enzymatic activity.

Leaving salt out during the autolyse allows the flour to hydrate and the dough to become extensible before the salt is incorporated.

Once the autolyse is complete, the salt and sourdough starter can be added and mixed thoroughly into the dough.

Do You Need to Autolyse Every Sourdough Recipe?

No.

An autolyse is a technique, not a requirement for making good sourdough bread.

Some recipes benefit from it more than others.

An autolyse may be especially helpful when working with higher-hydration dough, strong bread flour, whole-grain flour, or dough that tends to resist stretching.

If your current sourdough process produces dough that is easy to handle and bread that you enjoy, you don't need to add an autolyse simply because other bakers use one.

More time doesn't automatically mean better bread.

A good starting point for most sourdough recipes is a 15–30 minute autolyse.

Give the flour enough time to absorb the water, then pay attention to how your dough changes.

Does it feel smoother?

Does it stretch farther without tearing?

Is it easier to handle during your first set of stretch and folds?

Those observations will teach you far more about your dough than simply following the clock.

Because one of the most useful skills you can develop as a sourdough baker is learning to recognize what your dough needs.
