Why Is the Bottom of My Sourdough Bread Burning? 8 Simple Ways to Fix It

You spend hours feeding your starter, mixing your dough, completing stretch and folds, waiting through bulk fermentation, shaping your loaf, and patiently cold fermenting it overnight.

Then comes the best part.

You remove the lid from your Dutch oven and see a beautiful, golden sourdough loaf.

You let it cool, turn it over, and...

The bottom is burnt.

If this keeps happening to your sourdough bread, you're not alone.

A burnt bottom is one of the most common problems home sourdough bakers experience when baking bread in a Dutch oven.

The good news?

You probably don't need to change your sourdough recipe.

The problem is usually too much concentrated heat reaching the bottom of your Dutch oven.

Here are several simple ways to protect the bottom of your loaf while still getting a beautifully baked crust.

Why Does the Bottom of Sourdough Bread Burn?

Most sourdough bread is baked at high temperatures.

Many recipes call for temperatures between 450°F and 500°F.

A heavy cast-iron Dutch oven absorbs and holds a significant amount of heat.

This is one of the reasons Dutch ovens work so well for baking sourdough bread. The hot cast iron and trapped steam help create oven spring and a beautiful crust.

But there can be a downside.

If your Dutch oven sits too close to the bottom heating element, the base of the pot can become extremely hot.

That concentrated heat transfers directly through the Dutch oven and into the bottom crust of your bread.

By the time the center of your loaf is fully baked, the bottom may be overly dark, hard, or burnt.

Fortunately, there are several things you can try.

1. Lower Your Baking Temperature

If you're baking your sourdough bread at 500°F, try lowering the temperature.

For many home ovens, 450–475°F is plenty hot enough to produce excellent oven spring and a beautiful crust.

Some ovens also run hotter than the temperature shown on the control panel.

You may think you're baking at 475°F when your oven is actually reaching temperatures above 500°F.

Try reducing the temperature by 25°F and compare the bottom of your next loaf.

Small adjustments can make a noticeable difference.

2. Move Your Dutch Oven to the Middle Rack

Where you place your Dutch oven can have a significant effect on the bottom crust.

Avoid placing the Dutch oven directly above the bottom heating element.

Instead, position your Dutch oven on the middle rack or slightly above the center of the oven.

Increasing the distance between the heating element and the Dutch oven can reduce the amount of intense radiant heat reaching the bottom of the pot.

You still want enough heat for good oven spring and crust development, but you don't necessarily need your Dutch oven sitting at the hottest point in your oven.

3. Place a Baking Sheet on the Rack Below Your Dutch Oven

This is one of the simplest and most effective tricks to try.

Place an empty baking sheet on the oven rack directly below the rack holding your Dutch oven.

The baking sheet acts as a heat shield.

Instead of the intense heat from the bottom heating element reaching the Dutch oven directly, the baking sheet helps absorb and deflect some of that heat.

The baking sheet does not need to touch your Dutch oven.

Simply position it on the rack below.

If you consistently struggle with burnt sourdough bottoms, try this method first.

4. Use Uncooked Rice as a Heat Buffer

Another popular sourdough baking trick is placing a thin layer of uncooked rice underneath the parchment paper or bread sling.

The rice creates a small insulating layer between the hot Dutch oven and your loaf.

Add a thin, even layer of uncooked rice to the bottom of your Dutch oven.

Place your parchment paper or bread sling over the rice.

Then place your sourdough loaf on top.

You only need enough rice to create a light barrier.

Keep in mind that the rice will become toasted during baking and should not be eaten afterward.

5. Double Up Your Baking Sheets

If one baking sheet doesn't provide enough protection, try using two.

Stack two baking sheets together and place them on the rack below your Dutch oven.

The additional layer creates a stronger heat barrier.

This can be especially helpful for ovens with powerful bottom heating elements.

Again, the baking sheets should sit on the rack below the Dutch oven.

They do not need to touch the pot.

6. Don't Over-Preheat Your Dutch Oven

Preheating your Dutch oven helps create the hot baking environment needed for good oven spring.

But longer isn't always better.

For most home sourdough baking, approximately 30–45 minutes of preheating is sufficient.

Preheating a heavy cast-iron Dutch oven for an hour or longer can cause the bottom of the pot to become extremely hot.

If you're experiencing burnt bottoms, experiment with shortening your preheat time.

You want the Dutch oven thoroughly heated—not turned into lava.

7. Use Parchment Paper or a Bread Sling

Parchment paper provides a small barrier between the dough and the hot surface of the Dutch oven.

It also makes transferring your sourdough loaf into the hot pot much easier.

You can also use a reusable silicone bread sling designed for Dutch oven baking.

Parchment paper alone may not completely prevent burnt bottoms, but when combined with another technique—such as using a baking sheet on the rack below—it can help.

Always check the manufacturer's temperature rating for your parchment paper or silicone sling before using it at high baking temperatures.

8. Check Your Oven Temperature

Ovens aren't always accurate.

Your oven may be significantly hotter or cooler than the temperature shown on the display.

An inexpensive oven thermometer can help you determine the actual temperature inside your oven.

Place the thermometer near the rack where you normally bake your bread.

Preheat your oven and allow the temperature to stabilize.

Compare the thermometer reading with the temperature shown on your oven.

If your oven consistently runs hot, adjust your baking temperature accordingly.

My Favorite Fix for Burnt Sourdough Bottoms

If I could recommend only one thing to try first, it would be this:

Place a baking sheet on the rack below your Dutch oven.

It's simple.

You don't need to change your sourdough recipe.

You don't need to purchase expensive equipment.

And it helps reduce the concentrated heat reaching the bottom of your Dutch oven.

If your oven has an especially strong bottom heating element, try using two stacked baking sheets.

Combine this with baking on the middle rack, and you may notice a significant improvement in your bottom crust.

Should I Put a Baking Sheet Directly Under My Dutch Oven?

I prefer placing the baking sheet on the rack below the Dutch oven, rather than putting the Dutch oven directly on the baking sheet.

The goal is to create a heat shield between the bottom heating element and the Dutch oven while still allowing hot air to circulate around the pot.

What If My Bottom Crust Is Too Thick but Not Burnt?

A very thick, hard bottom crust can also be caused by excessive heat.

Try lowering your baking temperature slightly, shortening your preheat time, or adding a baking sheet to the rack below your Dutch oven.

Also make sure you aren't baking the loaf longer than necessary.

For the most reliable results, you can check the internal temperature of your bread.

A fully baked lean sourdough loaf typically reaches approximately 205–210°F in the center.

Does the Type of Dutch Oven Matter?

Yes.

Different Dutch ovens absorb and transfer heat differently.

Heavy cast-iron Dutch ovens hold a tremendous amount of heat.

The color of the interior and exterior surface, thickness of the cast iron, position of the Dutch oven in your oven, and proximity to the heating element can all affect how quickly the bottom crust browns.

This is why one baker may have perfect results at 475°F while another baker using the same recipe gets a burnt bottom.

You may need to adjust your baking setup to match your oven and Dutch oven.

Should I Change My Sourdough Recipe?

Probably not.

If the top and inside of your bread look good but the bottom is burning, the problem is more likely related to heat management than fermentation or your recipe.

Before changing your hydration, flour, fermentation schedule, or baking time, experiment with your oven setup.

Try changing one thing at a time.

Start with a baking sheet on the rack below your Dutch oven.

If needed, move the Dutch oven higher in the oven or lower your baking temperature by 25°F.

Keeping your adjustments simple will help you determine what works best in your kitchen.
